Whether you’re
hunched over a desk all day, standing behind a counter or running between
meetings, when lunchtime comes it’s very easy to grab something that’s not good
for us. I’m guilty of it too; Starbucks is my weakness – and a very big
weakness if I’ve had a stressful day.
I’ve found some
healthy, lunch recipes that are perfect for taking to work and stopping you
reaching for something you might regret later. I’ll be sharing these recipes
regularly, so check back for more.
Salsa
A perfect alternative to a boring, leafy side salad.
Ingredients
2 large tomatoes,
roughly chopped
1 medium onion, diced
1 jalapeno, diced
1 garlic clove,
minced
1tbsp limejuice
Salt & pepper
Fresh coriander,
roughly chopped
Directions
Mix tomatoes, onions,
jalapeno, garlic and limejuice. Season with salt & pepper. Leave to sit in the fridge for
at least 20 minutes, or perhaps overnight. Stir in coriander before serving.
This salsa is great
inside a tortilla with some chicken or ham, or tofu as a vegetarian option. You
can marinate chicken breasts in vinegar (such as balsamic or red wine), herbs,
mustard, garlic and a tablespoon of olive oil. Cooked over a medium heat, or
under the grill, and then sliced into a tortilla wrap with the salsa and you’ve
got a perfect, healthy lunch.
