Healthy Recipes: Chickpea Salad with orange and honey smoothie recipe






Preparation time: 5 minutes
Cooking time:  5 minutes
Total time: 10 minutes

Serves: - 2
For the smoothie
  • 2 oranges, peeled and segmented
  • 1tbsp runny honey (blossom for preference)
  • 200ml yogurt
  • 100ml orange juice
  • handful ice cubes
For the salad
  • 1 x 400g can chickpeas, drained
  • 2tbsp extra-virgin olive oil
  • 2 tomatoes, finely chopped
  • ½ red onion, peeled and diced
  • 1 sprig thyme
  • 2tbsp sweetcorn
  • salt
  • pepper
  • juice of ½ orange
