Healthy Recipes: Chilli Burgers with Guacamole Salsa

Cooking time:  15 minutes

Total time: 20 minutes

Ingredients:

  • FOR THE BURGER

  • 4 Quorn Chef's Selection Smoked Chilli & Lime Burgers
  • 1 tbsp vegetable oil
  • 4 burger buns
  • 50g crunchy lettuce, e.g. iceberg
  • 1 avocado, sliced

  • SALSA

  • 200g tomatoes, de-seeded and finely diced
  • 1/2 red onion, finely diced
  • 1 small red chilli de-seeded, finely chopped
  • 1 tbsp coriander, chopped
  • Juice of half a lime
  • Seasoning

  • GUACAMOLE
  • 1 small red chilli, de-seeded
  • 1 tbsp fresh coriander
  • 1 tomato
  • 1/2 red onion
  • Juice of half a lime


Method:

To make the guacamole, place all the ingredients except the avocado into a food processor and puree until smooth. Add the avocado and pulse until the desired texture is reached. Spoon into a serving bowl.

To make the salsa, combine all the ingredients and mix well. Season to taste.

Brush the Quorn burgers with a little oil and place on a griddle or BBQ for 8 - 10 minutes (as per back of pack instructions), turning frequently.

To assemble the burger, place the lettuce in the base of the bun, place the Quorn burger on top, then the avocado and finally top with a spoonful of the salsa.

Serve whilst hot with the guacamole.
