Ingredients:
1 Butternut Squash
1 medium sized onion
100g Brown Rice
Water
Parsley
Tin of Kidney beans or other beans
Cheese
Salt/Pepper
Oil
Method:

Preheat the oven 200ºC or gas mark 6
Cut the butternut squash in half length
ways.
Put in oven for 30 minutes or until soft.
In the mean time chop 1 onion and cook in a
big pan with a little oil.
When soft add 100g brown rice and cook for
1 min then add water to cover and simmer until soft and water gone.
When the squash is cooked allow to cool
little, dig the inside out and add to the rice etc.
Add in a small tin of kidney beans or other assorted beans.
Add chopped parsley.
Add cheese if wanted and then put mixture
back in the skins.
Season with salt & pepper, then return the dish back in oven for 30 minutes or until
cooked.
